Eco Friendly Baby Shower

ME Catering created a "Green" baby shower this past weekend with vintage china plates, antique white linen napkins tied with raffia, mason jars for ice tea, vanilla lemonade, spa water and wine. Our menu was centered around organic sustainable produce from Underwood Farms and meats from Hearst Ranch and Laura's Farms. We used wheat grass, birds nest and blown out eggs as our centerpieces to compliment the comfort of our hostess's backyard. The mom-to-be radiated serenity to her invited guests and wove a tapestry of wonderful memories.

Yesterday we had such a great time catering for the lovely ladies of the Valencia Women's Connection. They enjoyed an apple stuffed chicken, raspberry asparagus, zucchini chocolate coffee bread, a berry spinach salad in a poppy seed dressing, an apple harvest salad in an orange vinaigrette, and a watermelon and feta salad. Special thanks to the ladies of White House Black Market (at the Valencia Patios) for modeling your new spring and summer looks during the fashion show! See you ladies next month!

Today we had a fun time teaching at a bridal shower. The ladies started with naan bread with hummus, green beans with a saffron aioli, and mini ramekins of our 6 cheese mac and cheese. Each guest got to watch and participate during 6 different recipes including an artichoke stuffed garlic bread, a cape cod chopped salad, a california grilled panini, a grilled strawberry and goat cheese panini, a toblerone sauce to go over mixed berries and bananas, and an angel food mini cupcake. The girls all got to take home a cookbook of these recipes and also a few others. Since we were running around so much, pictures weren't taken too often, but here a a few shots of our prepped tastes and paninis!

We've been busy this weekend! Yesterday we catered for the always lovely Dela Salle group and whipped up some new and very tasty dishes. To start guests got to munch on various Naan breads (traditional, garlic, and curry) with hummus and green breads with saffron aioli. For the main course, we served our apple harvest salad and berry salad in a poppy seed dressing with garlic bread, a 6 cheese mac and cheese, a penne pasta with sausage, shrimp and pepperoncinis, grilled mixed vegetables and leeks, and tri-tips. Strawberries and cream and a butterfinger cheesecake were devoured for dessert.

The other day we had a great time catering for the lovely girls of the Valencia Hills golf group. After their round of golf, they sat down to a meal complete with an Italian antipasto salad, an apple harvest salad, cheesy breadsticks, and a pasta bar full of penne pasta, assorted grilled vegetables, sliced chicken breast, grilled sausage, meatballs, an alfredo and marinaria sauce. For desert, we served a deliciously decadent chocolate cake and assorted berries and banana drenched in toblerone sauce.

Surprise 50th Anniversary

Yesterday we had fun catering a surprise party in honor of 50 years of love. After the renewal of vows, guests enjoyed a Santa Fe Tri-Tip Salad, our Apple and Candied Walnut Harvest Salad, and Watermelon, Mint, and Feta Salad. We also had Croissants and Honeyed Cornbread to pair with Rosemary and Herb Roasted Potatoes and a Balsamic Gazed Chicken. To many more years of love!

Alice in Wonderland's Mad Hatter Tea

Yesterday we catered a very fun bridal shower in Mad Hatter theme, for a beautiful bride to be. To start, she and her guests enjoyed a platter of scones with clotted cream and jelly, madelines, and assorted savory and sweet cookies. After a few games, they feasted on 5 different sandwiches: a cucumber rye sandwich, an egg salad and onion sprout sandwich, a brie, tomato, and turkey croissant, a tarragon chicken salad sandwich, and lastly an asparagus and saffron aioli sandwich. Those all were paired with our berry poppyseed spinach salad, watermelon and feta arugala salad, an apple, cranberry field green salad, and our delicious zucchini bread. Cupcakes, sign, and jars of jam were provided by the host and matron of honor to be. Great party girls!

Oscars Party 2011

We had the opportunity to cater an event with our favorite ladies this past weekend. While they all dressed to the nines in their award winning dresses and accessories, we prepared delicious and fun bites for the whole night. To start, the girls nibbled on french beans with a saffron aioli, maple and rosemary glazed nuts, and herb cheese stuffed mushrooms. We later progressed to a potato and chili creme soup shooter, a tri-tip and dijon mustard and a lentil and herb creamed cheese crostini, and an edamame and pomegranate seed salad. After, the beautiful ladies enjoyed our chicken "street tacos" and a lamb and feta burger. To finish the night, the girls loved our mixed berries drenched in a toblerone chocolate drizzle. Thanks for a very fun night girls!

Thanks to a little free time and internet browsing, I stumbled upon a delicious recipe that men, kids, and friends will love (trust me on this, I speak from experience). These Oreo stuffed Chocolate Chip Cookies are a perfect gift for your Valentine this February 14th. Quick and easy to make and taste absolutely sinful. You can mix up the Oreo flavors and really make it your own.. Have a very Happy Valentine's Day!

Oreo Stuffed Chocolate Chip Cookies

2 sticks (1 cup) softened butter

3/4 cup packed light brown sugar

1 cup granulated sugar

2 large eggs

1 tablespoon pure vanilla

3 1/2 cups flour

1 teaspoon salt

1 teaspoon baking soda

10 oz bag chocolate chips

1 pkg. Oreo cookies

Preheat oven to 350 degrees. Cream butter and sugars together with a mixer until well combined. Beat in eggs and vanilla.

In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo cookie. Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough. Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack. Makes about 2 dozen VERY LARGE cookies.

Every year we get to cater for some incredibly fun ladies at their annual Christmas cookie and ornament exchange. The night was filled with laughs, love, and pleanty of food. We served an assortment of h'orderves, including our veggie bowl with caesars dip, corn chips with an artichoke dip, pepper chips with our "barefoot" onion dip, cranberry meatballs, filet mignon wrapped bacon bites, barbecue mini hotdogs, chicken, mozzarella and pesto quesadilla bites, chicken eggrolls with a ginger spread, mini "pigs in a blanket", an assorted cheese platter, and herb stuffed mushrooms. Our holiday punch and spa water with lemons, limes, and clementines finished off the night. We had a great time ladies, see you next year!

Today we had a h'orderves party for a group out of Newhall, Ca. They enjoyed many of our famous goodies, including our cheese platter, vegetable bowl with caesars dip, and sweet potato chips with a honey blue cheese dip. We also added mixed sausages, mini pigs-in-a-blanket, pretzel rods with a hot and sweet mustard, cones of our popcorn mix, and to finish, a yogurt pretzel bar & butterscotch spice cake bites. We had a lot of fun, hope you all had a blast!

Last night we had such a great time celebrating a casino themed birthday party. Today we gave thanks and celebrated another year of health and happiness with our annual Thankgiving dinner with a family at Friendly Valley. They feasted on both turkey and brown sugar and maple glazed ham with all the trimmings, including our maple and dill glazed carrots, creamed corn, cranberry apple stuffing, and mashed potatoes. All was paired with our apple harvest salad and assorted bread rolls.

Tonight we celebrated the love between two beautiful people. The night was filled with delicious appetizers, including our veggie platter with hummus, meat and cheese platter, jalapeno cornbread madelines with guacamole and mango salsa, bruschetta and garlic crostinis, peppered chips with a honey blue cheese dip, chicken taquitos with guacamole, cranberry meatballs, rolled tri-tip with a soy chili ajus, maple rosemary mixed nuts, and herb stuffed mushrooms. Yesterday we had the pleasure of cooking for a deanery meeting at a local Catholic church in the San Fernando Valley. The priests were able to choose from our famous apple harvest salad, maple glazed carrots, a chili spiced salmon, and beef bourguignon over rice. For dessert we had a Butterfinger and Reeses peanut butter cup cheesecake, pumpkin pie bites, and lemon bites.

Because of the store's relocation to the Patios at the Valencia Westfield Mall, we had yet another opportunity to work with the amazing White House/Black Market company! We celebrated with a dessert bar filled with goodies. Customers were able to enjoy peppermint red velvet whoopie cakes, raspberry bars, blueberry and also chocolate coconut biscotti, autumn bark, chocolate tassies, hot chocolate and raspberry brownies, rice crispy bites, peppermint crisp cookies, and lemon and chocolate cinnamon madelines. Our yogurt pretzel bar and cucumber strawberry spa water was also a hit with the crowd. Congratulations on the beautiful new store Valencia White House/Black Market!

The menu for at yesterday's gorgeous wedding included a pasta bar, complete with a four cheese tortellini and also rotelle pasta. Guests were able to choose from 3 different sauces: a basil pesto, alfredo, and marinara, with various toppings including a rosemary & roasted garlic grilled chicken, Italian meatballs, assorted grilled sausages, and grilled vegetables. Our famous apple harvest salad, an Italian antipasti salad, and a roasted asparagus & parmesan salad paired beautifully with the meal. Congratulations Cliff and Amaris!

Babies are in the air! We also celebrated another baby shower this weekend for a glowing mommy to be. The beautiful mommy and her family and friends munched on 2 different salads, cucumber tea sandwiches, lemon yogurt pasta salad, quiche, a curry chicken salad sandwich, and a caprese sandwich. The Wine Affair at Valencia White House/Black Market

We had so much fun at the third annual Soroptimist International Wine Affair! Guests enjoyed great music and beer paired with some of our favorite appetizers! Ticket holders munched on our cheese platter, vegetable platter with roasted red pepper hummus, maple and rosemary glazed nuts, caramelized onion dip, and sweet potato chips with honey blue cheese. For dessert, we offered a black, white, and red (the limited edition color for the store) candies. Can't wait till next year!

Halloween Pumpkin Bread

Pumpkin Bread

Makes: 1 8X4 Loaf

1 cup canned unsweetened pumpkin
1 cup sugar
1/2 cup canola oil
2 eggs
1 3/4 cup all purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1/2 tsp salt
1/4 tsp baking powder

1. Heat the oven to 350* F. Grease an 8X4 inch loaf pan.

2. Beat together the pumpkin, sugar, oil, and eggs in a large bowl.

Sift together the flour, baking soda, cinnamon, cloves, nutmeg, salt,

and baking powder. Add pumpkin mixture, stir to combine all

the ingredients and pour into prepared pan.

3. Bake for 60 min until top is lightly brown and skewer comes

out clean.

4. Cool on a rack. Serve with pumpkin cream cheese or cinnamon

cream cheese.

Montrose Bowling Alley Baby Shower

We got to do a baby shower tonight for a couple that is very near and dear to our hearts. Around this time last year, we had the pleasure of catering their wedding and now they are expecting a beautiful baby girl. We had an absolute blast at the Montrose Bowling Alley serving all the wonderful guests potato salad, veggies and hummus, sweet potato chips with a honey blue cheese dip, hawaiian lime coleslaw, fresh fruit with a carmel apple dip, mini sliders, mini hot-dogs, mac & cheese, and marinated chicken skewers. For dessert, we had a cupcake bar with four different flavors: red velvet, s'mores, chocolate peanut butter cup, and cookies & cream. We had a great time you guys! Good luck to the growing family, we can't wait to meet her!

We introduced some new appetizers to the menu including grilled peach and prosciutto skewers, goat cheese and tomato puff pastries, a frittata, and a grilled veggie platter with a balsamic dressing. We also prepared our crowd-pleasing fruit and cheese platter and stuffed mushrooms. For the main course, we plated our apple harvest salad, an herbed chicken, rosemary potatoes, and blanched green beans. Just this weekend, we threw a beautiful party for a very special person in our lives. We planned a Paris birthday party for a little girl who is near and dear to our hearts a few weeks ago in Thousand Oaks, Ca. Between the handmade flower and feather headbands, painted portrait canvas', and the ooh la la candy bar, the girls had a blast. They enjoyed individual mac and cheeses, french fries, little pigs in a blanket, cheese croissants, and carrots in ranch dressing. For dessert, they got mini ice cream cones and chocolate cupcakes. Belcaro's Anniversary Party

We just recently did a event for the Belcaro housing development in Valencia, Ca.

The event consisted of three different stations: an Italian Station; including pasta salads, mini meatball subs, brushetta, and sausage and peppers, a SouthWest Station; consisting of pork and chicken tacos, nachos, and a salsa bar, and a U.S.A. station; full of mini hot dogs, mini sliders, potato salad, and lime coleslaw. We had a blast doing it all.

For a local Chatsworth, Ca birthday tea party, we made individual caprese tea sandwiches, salmon and chive tea sandwiches, a 4 cheese quiche, and three other salads including a melon, mint, and prosciutto salad. We also baked a dessert bar full of sugar cookies, apricot almond bars, and blueberry biscotti. The day was absolutely fabulous!

Chocolate-Cherry Cola Cupcakes
makes 24 cupcakes

1 jar (10 oz) maraschino cherries, drained, 1/4 cup liquid reserved
1 box Betty Crocker ® SuperMoist ® devil's food cake mix
1 cup cherry cola carbonated beverage
1/2 cup vegetable oil
3 eggs
1 container (12 oz) Betty Crocker ® whipped vanilla frosting
1 cup marshmallow creme
24 maraschino cherries with stems to top, well drained, if desired (we used cinnamon lips instead)

instructions:

1. Heat oven to 350ºF (325ºF for dark or nonstick pan). Add paper liners to cupcake pan. Chop cherries; set aside.

2. In large bowl, beat cake mix, cola beverage, oil, eggs, and 1/4 cup cherry liquid with electic mixer on low speed 30 seconds. Beat on medium speed 2 minuets. Stir in chopped cherries. Pour in pan.

3. Bake 22 - 25 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.

4. In small bowl, mix frosting and marshmallow creme until smooth. Frost cake. Top each cupcake with cherries.
